The Crispy Brussels might just be my favorite restaurant dish of all time---anywhere. A friend recommended it when I told them I was visiting Virago for the first time. I told them I typically don't like Brussels sprouts, but they insisted it wouldn't matter. They were right. These Brussels are perfectly crisped, with a depth of flavor that's savory, slightly sweet, and utterly addictive. The balance of textures and seasoning transforms a humble vegetable into something crave-worthy and unforgettable. I'm so glad I listened to that friend. Now, I recommend them to everyone I know heading to Virago---Brussels fan or not.
